cleaver

AKA Chinese cleaver or vegetable cleaver.

Classifications by thickness:

  • Thickness 2mm, steep angle - Chopping vegetables, slicing carrots paper thin, remove skin from fish.
  • Thickness 3-7mm - Versatile. Smash garlic.
  • Thickness 8mm, shallow angle - Cutting through bones, wedging, breaking up food.

Length should be at least 7 inches.

Hardness 60 or 61.

Full tang. Tang is joining of blade and handle.
